Now, this doesn’t mean that it was a straight line, mind you, not at all. Some say that Roman soldiers created the first pizza when they added cheese and olive oil to Matzah bread. But one thing is known for certain, pizza as we know it today came into being as a result of the discovery of the tomato in the Americas, and its return to Europe in the 16th century.

So where did the pizza begin? The pizza as a flatbread with a tomato sauce started in Naples, and quickly became popular. Until the 1830’s it was almost exclusively sold from open-air stands and out of pizza bakeries, a tradition which is largely followed even today.

One other fun piece of trivia is the source of the ‘marinara’ sauce that is the traditional tomato sauce. Have you ever wondered why it’s called marinara? Because it was created by “La Marinara” the mariner’s wife, to serve to her seafaring husband upon return from fishing the Bay of Naples.

National Mole Day History

History of National Mole Day

National Mole Day commemorates the hypothesis of an Italian scientist named Amadeo Avogadro. Born in 1776, he was one of the noted founders of physical chemistry and was only really given his dues fifty years after his hypothesis was created and after his death. He is known for his hypothesis called ‘‘Avogadro’s Law’’ in which pressure and a fixed temperature, equals volumes of gases which hold the same number of molecules.

A high school science teacher appeared in “The Science Teacher” in the 1980’s explaining her reasoning for wanting a National Mole Day. Maurice Oehler, a high school chemistry teacher read this and was inspired. He created National Mole Day. After this, on May 15, 1991, an organization called the National Mole Day Foundation (NMDF) was created. The foundation’s opening was announced through news releases to alert the media.

The idea was to gain members who were signed up to the foundation. These were usually students or simply those with an interest in chemistry, teachers and chemists most likely. Then ideas would be collected from high school chemistry teachers, especially those who were members of the foundation and who celebrated National Mole Day, and those ideas would be assembled into a newsletter which would be distributed to members of the foundation. By 1992, the foundation was no longer a foundation but rather a non-profit corporation in Wisconsin with a 9 person board of directors.

The day also falls during National Chemistry Week and does a great job of fostering interest in Chemistry amongst students. The day also has a theme every year starting in 1991 with ‘‘The Mole the Merrier’’, 2001’s ‘‘Molar Odyssey’’ and 2012’s ‘‘Animole Kingdom.’’ The day has also been called ‘‘Molemorial Day.’’

History of AIDS Awareness Month

HIV/AIDS, or the human immunodeficiency virus and its associated immune deficiency syndrome, first appeared in the Congo in the 1920s, spread to the Western Hemisphere via the Caribbean in the 1960s, and became a global pandemic in the 1980s as cases exploded around the world.

Because the first diagnosed patients were gay men, it was first believed that AIDS only affected homosexuals, drug users, and later people of Haitian origin. As scientists discovered more about the disease, they learned it was caused by a virus that could be transmitted in several ways and could affect anyone. By the end of 1985, more than 20,000 cases of AIDS were reported all over the world. Doctors and researchers scrambled to understand the infection and develop treatments and vaccines.

In 1987, the first antiretroviral medication effective in treating HIV, azidothymidine (known as AZT), was developed. A positive diagnosis was no longer a death sentence, but despite new information and treatment options, HIV/AIDS continued to spread. By the end of the 1980s, AIDS was a full-blown crisis, with more than 400,000 diagnosed cases.

To date, about 35 million people have died from AIDS, and roughly that same number live with the virus. In 2010, there were over 20 approved treatment options for HIV/AIDS, and new treatments are developed all the time. No vaccine exists yet, but thanks to anti-retroviral drugs and constantly improving treatment options, it’s now possible for an HIV patient with access to care to live a full and healthy life.

AIDS Awareness Month, observed every October, supports educational campaigns that disseminate science-based, factual, and clear information to youths, at-risk people, and the general public. After the Second World War, The Universal Declaration of Human Rights was adopted by the United Nations General Assembly at the Palais de Chaillot, in Paris. The Declaration represents the first global expression of rights to which all human beings are inherently entitled. As the world becomes more and more connected and globalized, it’s important to remember that a ‘global monoculture’, or a homogenization of cultures, kills off traditional cultures and unique traits of people. History of National Fetch Day

Fetch may be a game played between a dog and his human, but it has its roots tens of thousands of years ago and the game being played was survival. Recent science indicates that the first dogs were domesticated by humans sometime between 18,000 and 32,000 years ago. Their wolf ancestors slowly progressed from hunting competitors into hunting partners leading to their general domestication as pets over the millennia.

This is where fetch comes in. As a hunting partner, dogs played several different roles, one of which being to retrieve food — think the bloodhound from Duck Hunt but without the snarky laughter. The breeds that were best at this critical component were the ones that were more likely to stick around becoming the fetch lovers we love today. Eventually, the need to fetch food was replaced by far less survivalistic endeavors (ya know, like snuggling and taking up the whole bed). And so the process of fetch became the game of fetch, only this time with a greater bonding component.

So why do dogs play fetch? Turns out, they are chemically and psychologically disposed to the game. Playing fetch feels good to them. The exercise creates a sort of “runner’s high” that triggers the reward regions in their brains. That tickling of the reward regions becomes self-reinforcing. Dogs who feel good playing fetch play fetch more.

There is also the bonding component. Dogs are notoriously loyal animals and the bond created between a dog and his human playing fetch has a significant impact on that relationship. It provides much-needed exercise for the dog (and who are we kidding, the human too), and reinforces the relationship chemically and psychologically. Dogs love fetch. They play fetch with their humans. Dogs love their humans. What lovely math, eh?

History of National Spina Bifida Awareness Month

Spinal defects have existed since the beginnings of mankind. Anthropologists have uncovered many depictions in statues and artifacts from ancient civilizations of people young and old with malformed spinal cords. In the Classical Period of the Greek physician Hippocrates, descriptive writings revealed such defects, though they didn’t have the proper medical science and tools to heal them at the time.

The first description of a spina bifida case was by Nicolas Tulp in 1653. Tulp proposed the term and described it as a vertebral anomaly and it was considered a duplication of the spinous process of the vertebra. Spina Bifida was first found in the textbook Observationes Medicae, written by Tulp, with descriptions of six Spina Bifida cases. One illustration showed a Spina Bifida case of a child with a large lumbar level myelomeningocele defect.

From the early 1600s to the mid-1800s, surgeons attempted to treat Spina Bifida to no avail. Despite this, they continued their research and approached the defect with new techniques, draining or injecting solutions into the sac. Mortality rates fell, but patient debilitation was still the end result. In the middle of the nineteenth century, Dr. James Morton used an iodine and glycerine solution for injection into the sac and this technique proved successful.

In 1973, the Spina Bifida Association of America was formed in Chicago Illinois and it was primarily used as a source of information for its chapters and members. They enabled children with spina bifida to live longer by using new treatments and diagnostic tools that helped families affected by it. As time goes on, the month of October is named as its official month and in the twenty-first century, events and fundraisers have increased in the ongoing battle to better treat spina bifida.

Until the seventeenth century, the liver was believed to be the origin of blood, with Roman philosophers describing the organ as warm and moist, and “the source of the veins and the principal instrument of blood production.” Several ancient scholars also assumed that a fire perpetually burned in the liver, leading them to consider it the spot where the human soul resided. 

Liver ailments have been known to mankind for centuries. Autopsies performed on Egyptian mummies showed liver damage caused by a widespread parasitic infection called Bilharziasis. The Greek physician Hippocrates described liver abscess in 400 B.C. and the mythological story “Prometheus” also implies that the Greeks may have been aware of the liver’s ability to regenerate from severe damage.

The first liver transplant was performed by Francis Moore on a dog in 1958. The first human liver transplant was in 1963 and was performed by Dr. Thomas E. Starzl, setting the precedent for liver treatments still performed to this day. 

Recently we have begun to start observing National Liver Awareness Month. The annual occurrence serves to highlight the importance of the organ and to celebrate and medical discoveries made by scientists.

No one knows the exact number of dogs that find safe harbor and temporary housing in community animal shelters each year. But these shelters are the last hope for an estimated 3.3 – 4.5 million misunderstood, unwanted, abused, or neglected dogs in need of a fresh start with a compassionate human friend. 

But lost, abandoned or unwanted dogs have not always had shelters where caring humans provide help and hope. As we celebrate Adopt a Shelter Dog Month, we would be remiss to not recognize the founder of America’s first animal shelter, Mrs. Caroline Earl White. Mrs. White and a group of 30 female animal rights activists formed the “Women’s Humane Society” in 1869 in Philadelphia, Pennsylvania. The Society’s initial mission focused on advocating for the humane treatment of carriage horses on city streets. Horses were considered beasts of burden for industrial purposes at the time, and carriage horses were often seen being treated harshly on city streets, frequently denied access to clean water and medical care.

After success in advocating for more humane treatment of horses, the women turned their attention later that year to smaller domestic animals when they opened a shelter where lost dogs could be found and reclaimed by their owners or placed in new homes. As their commitment to cause continued, the Women’s Humane Society began the first formal educational program about the humane treatment of animals. In 1909 they raised enough money to open and support a dispensary where owners could bring their dogs and other small animals for medical attention.

The determination and commitment to animal rights by Mrs. White and her band of animal activists paved the way for dogs to be treated humanely some 50 years before these women could even vote. Their original shelter, which opened as “The Women’s Branch of the Pennsylvania Society for the Prevention of Cruelty to Animals,” is still in operation today as the “Women’s Animal Center” in Bensalem, a suburb of Philadelphia.

Today there are approximately 5,000 community animal shelters nationwide and perhaps as many as 10,000 when including rescue groups and animal sanctuaries in the count. Knowing there are so many places of refuge for unwanted dogs gives us hope that every dog in every shelter will be adopted into a loving permanent home during Adopt a Shelter Dog Month

From cowboys to Girl Scouts, everyone who goes on camping trips has experienced the culinary delight that is chili con carne, also known simply as chili. First prepared somewhere in Southern Texas or Northern Mexico, chili started out as a simple preparation of meat and spices. Working-class women stewed beef pieces, chilis, and other vegetables and spices to make a hearty dish that would feed a whole family.

In San Antonio, women known as “chili queens” made and sold chili by the bowlful in the city’s markets. Soon “chili parlors” began popping up, and the practice spread throughout Texas and other states, with each chili parlor claiming its own special, secret recipe. In the days before widespread home refrigeration you could purchase “brick chili,” a dehydrated version of the stew that kept longer and could be cooked with some water.

In 1893, the San Antonio chili stand became an exhibit at the Columbian Exposition in Chicago, showcasing the humble “bowl o’ red” to the nation and popularizing chili across the Midwest.

At its core, chili is just a seasoned stew of beef and chili peppers, topped with cheese and onions. But don’t be fooled — this deceptively simple dish sparks heated debates over what ingredients truly belong there. The only ingredients people can agree on are chilis and beef — the rest is up for debate. Even though beans seem like a natural addition, some chili connoisseurs swear beans have no place there at all.

Today, chili remains a popular part of American cuisine and a ubiquitous camping food. You can find dozens of varieties including beef, bean-less, vegetarian, and turkey to suit your tastes.

A lot of people do not realize that they are in an abusive relationship. Here are some of the signs that you could be in an abusive relationship that you need to get out of…

  • Your partner sexually or physically abuses you. If they ever make you have sex with them when you don’t want to, hit you, shove you, or push you, this is domestic abuse.

Just because you don’t have bruises on your skin does not mean you are not being abused. A lot of women and men suffer from emotional abuse, and it is no less destructive. Unfortunately, emotional abuse is often overlooked or minimized, even by those experiencing this.

Emotional abusers look to chip away at your feelings of independence and self-worth. You can end up feeling like you do not have anything without your abusive partner or that there is no way out of your relationship. 

Emotional abuse includes verbal abuse. This includes controlling behavior, intimidation, isolation, shaming, blaming, name-calling, and yelling. Abusers who use psychological or emotional abuse will often throw about threats of physical violence, as well as other repercussions if you do not do what they demand. 

The scars of emotional abuse run deep, and they are very real! You may assume that physical abuse is a lot worse, as people can end up with physical wounds and send you to the hospital. However, emotional abuse can be just as damaging. Sometimes, it can even be worse. This is why it is important to raise awareness of all types of domestic violence and abuse.

Financial abuse is one of the subtler forms of emotional abuse. Some examples of this include:

  • Taking your money or stealing from your
  • Sabotaging your job – calling constantly or making you miss work
  • Preventing you from choosing your own career or working
  • Restricting you to an allowance
  • Withholding basic necessities, such as shelter, medications, clothes, and food 
  • Making you account for every penny you spend
  • Withholding credit cards or money
  • Rigidly controlling your finances 

How To Observe Domestic Violence Awareness Month

There are a number of different ways that you can observe Domestic Violence Awareness Month. One option is to spread awareness about domestic violence, including the impact it has on people and how to spot the signs. This is something that you can do from your computer. Simply talk to the person in private and let them know that you are concerned. Mention the signs and why it has worried you. Tell them that you will honor their privacy if they open up to you, and tell them that you can help them in any way possible. Often, people in domestic relationships need someone to help them out of the situation, and so one conversation can make all of the difference.
